Okay, today is November 30th, and despite my best and hardest wishes, tomorrow will dawn bright (and hopefully clear) on December 1st! WOW! The turkey soup seems barely made before Christmas barrels toward us like a speeding freight train. (Deep Breath, Deep Breath.) Well, tonight I’m taking some of my own best advice and cooking two pork tenderloins – one for dinner now and one for later. Paired with a little peach chutney (yes, thank you, I did make it myself this summer!) and some homemade garlic mashed potatoes (also freezable, by the way) I’m getting two meals for one. I feel better already!

PS On those mashed potatoes, definitely freeze your leftovers. When ready to use, just thaw to room temperature, pop them in a saucepan and use your whisk to bring them right back to home made shape! Delicious, and not a peeling in sight.
